This small and exceptional lot comes from the single hectare farm of Juan Jose Ventura. The honey process is harvested ripe and de-pulped the next day. In the Anaerobic process, the coffee is fermented in sealed containers for 25 hours dry. This technique results in a unique showcase of fruit and acidity in the cup. We taste sparkling strawberry and apple flavors with smooth praline and balanced sweetness.
